RAW ENERGY BITES:

ingredients:
– 1 cup medjool dates, pitted
– 1/2 cup oats
– a few squares of a dark chocolate bar (more or less depending on your preference), roughly chopped – you can also use chocolate chips if you prefer
– 1 tbsp hemp seeds
– 1 tbsp almond butter (PB also works great if you prefer!)
– shredded coconut for topping

instructions:
– pulse the dates in a food processor a few times
– add all other ingredients except coconut into the processor and pulse a few more times
– form balls by hand and top with shredded coconut
– eat as is, store in the fridge!

 

3 INGREDIENT PANCAKES:

ingredients:
– 1 cup oats
– 1 ripe banana
– 1/2 cup almond milk (add more if needed)
– optional extras: vanilla extract, cinnamon
– coconut oil for frying
– toppings: fruit, shredded coconut, maple syrup
instructions:
– add all ingredients into a blender and blend until smooth and liquidy
– heat a pan with some coconut oil
– place a spoonful of batter into the pan and flip once bubbles form
– cook evenly and serve with fruit + other toppings

LOW CARB HIGH PROTEIN POKE BOWL:

ingredients:
– 1/2 head of cauliflower
– 1 mini cucumber
– 1/2 avocado
– 1 green onion 
– 1/2 cup frozen edamame beans, steamed
– optional toppings: pickled ginger, sesame seeds, soy sauce, sriracha etc
recipe:
– make the cauliflower rice base: take 1/2 head of cauliflower and chop into pieces, then throw them into a food processor and pulse until it looks like rice
– place into a bowl and add all other ingredients
– add toppings

 

ANTIOXIDANT AÇAI BOWL:

ingredients:
– 1 frozen banana
– 1 tbsp açai berry powder
– 1/2 cup frozen strawberries
– toppings: berries, coconut flakes, granola, fruit, chia seeds, etc!

 

instructions:
– throw the frozen banana + berries + açai powder into a food processor and pulse until it all combines (this will probably take a few minutes, but refrain from adding water or liquid into the processor as this will ruin the smooth ice-cream like texture
– once the base has an ice-cream texture, add it to a bowl and throw toppings on top!
